More than 30 years ago, a group of engineers and researchers in Minnesota put their heads together to figure out how farmers in Uttar Pradesh, India, could store their potatoes after harvest. The result was Cool Storage Sheds, a technology that used evaporating water to cool the shed's air temperature, allowing farmers more time to sell their potatoes. Today, CTI still focuses on the postharvest problems of small farmers, designing food and water technologies that are appropriate and profitable.
